Ok I read all the posts that I could find about the instructions people give their players and their teams etc.
I am playing as Brentford and I have Nelson in goal who is ok but just never seems to get a clean sheet. If I say what I'm doing can someone offer me some advice because I seem to conceed the most annoying pea trickler goals or goals from 40 yards that just shouldn't go in. I think it is Nelson's fault all the time which makes me think his settings as wrong.
Basically I play with a team settings of
11 mentality
10 creativity
8 passing
13 tempo
12 width
with no offside, or tight marking or playmaker
but I do play counter attack
My aim is to play like arsenal - fast football on the break but mostly through passes not long ball.
My DCs are set at
mentality 4
create 7
pass 11
All the others are team or rarely.
no tight marking, but they do man mark
DR/DL are
M&C - team
pass - 8
CD - 10
Often Forward runs, no marking
Now I conceed about 2 a game but some games I lose 5-0 in games I should win. then I will go out next game and win 4-0. both games would be at home only in the 5-0 loss game the keeper would just make mistakes or seemingly let the ball go straight through him or palm it out to their strikers
personally i wouldnt give your defence too much creative freedom or a mentality other than full on defence cause they will not be as tight and secure if they have some way to move.
also make sure your GK instructions are all on defensive build so that helps to prevent him moving about or messing about with the ball.
Ok, you want to play like Arsenal but you are Brentford, so you have to account for it.
First, slow down tempo. It has nothing to do with how fast your players move, but actually instruct your players make decision fast. They have to be very good at decisioning to be able play like you ask. So tempo 7-8 won't make your style much slower, but will give your players time to make decision. It affects your GK as well.
Second, unless you are clear favorite, don't play wide. Normal or even a bit narrow formation will help you play more compact = defend better.
Third, you have a huge mentality gap between FBs and DCs. Remember, mentality = position on the field. Your FBs are too high + often forward runs = you have only 2 defs. What I would do is set DCs mentality around 5-6 (other settings for DCs look fine), FBs on team mentality, but reduce overall team mentality to 8-9. Since you play counter attack it makes sense to be a little deeper overall. Finally, FBs on mixed forward runs. In this case, if you are clear favorite you can a)increase team mentality to 10-11 = FBs higher and support attack; b) increase width; c)vary def line.
I personally set my team personal mentalities approximately like this
Team mentality varies from 8 (away against stronger team) to 11 (home against much weaker team).
I don't know what formation you play, but in general my rule is: midfielders and fast ST close down very often (15-16), FBs often (13-14), TM normal (10) and DCs rarely (5).
You did not mention GK instructions and I know people have different prefernces. I prefer Mentality 5, CF - 4, others rarely.
Does that mean that you all put your goalie mentality on ultra defensive with very little creative freedom? I usually set everything to rarely and have a defensive mentality. I have slightly long passing. hope that makes more sense?

Oh yeah, I forgot, passing is normal or even direct. Sorry. GK Mentality = DCs ment - 1 or 2. Creative freedom little - I don't want him to create anyting, just be a keep.
