theyre not important but they can help a player. like having a striker with 'places shots', he's more likely to put away his chances rather than hitting them over the bar all the time
but also, prefered moves can be negative. like if a player has 'argues with officials' he's more likely to pick up bookings and get in trouble
They certainly do help (mostly anyway, I've never been too convinced that "plays his way out of trouble" or " dives in to tackles" is good for a defender).
If you look at someone like Eddie Johnson who most people rave about its not just his great physical stats that make him so prolific.
He has "likes to beat offside trap" and "knocks ball past opponents" which help out his really rather poor off the ball and dribbling skills and make full use of his pace and acceleration.
"places shots" and "likes to round keeper" help out his poor composure and average finishing.
My experience is that they help a lot. Particularly if you are employing players that fit into your tactic. For example, if you want your wings to hug the line and your left wing "hugs the line." It is that much easier to get him to do that regularly.
Also, I have found that strikers that I have used without preferred moves simply do not do as well as ones that do. Every MUFC striker to start has moves. They score goals by the buckets if you attack. I have not had the same results with solid squads that have Delgado, V.Hleb and some others.
