Because the "tall" players are the good jumpers.
Height is taken into account a bit. It regulates how likely a youth player created by the game will get a high jumping stat. And, anecdotal evidence here

, I find that tall players are more likely to get on the end of high balls if unchallenged than their shorter counterparts.
That last bit may be pure speculation and wishful thinking that my 6' 3" winger with 9 jumping is scoring a lot of headers at the far post.
