First of all Apologies for the stupid question to follow.

How do you decide which striker is "pacy" or a "targetman" if the stats are relatively close.

Does it then go on preferred foot?

Or is there another way to implement these

If the stats are close, then you could opt to use mixed as an instruction. A TM can be pacey or he can be strong. That's a very good player to have

Does the "feet" play a part too ie left, right or both

hmm not really infact...you should put them on opp sides..a left-footie attacks from the right, and vice versa. If you think about it you'll see the logic.
