i guess it has something to do with my OI settings and player instructions, probably SBs aren't set well.

Why dont you upload the team instructions, and match stats, so that people can see what is going on.
All I can say is you need to check constantly the stats during the game. If you play control tactics you have to make sure you have upper hand in possession, passing % and number of key passes. Otherwise your tactic is doing nothing.
If you see opposition passes at ease, try to set your midfielders, wingers and strikers to higher closing down to stop them and win balls in their half. If you do that and you see the opposition catches you out of position, it means you pressure does not work okay.
The DCs need to be set at def. mentality and closing down to rare: 4-8, otherwise they will go out of position.
Play deeper def-line if you see the opposition passes long balls behind our defense. Play higher def-line if you attack more and they clear the ball often. this will help you win those cleared balls near the center circle.

i need someone who can gimme tips for OI, especially against lone striker since i dont know what to set ( except for close down always - which is obvious ) for the striker and wingers..

here are some pointers for opponent instructions:
- always close down tall strikers.
- do not close down faster strikers.
- hard tackling on players that can dribble well and can cause you trouble, especially if they have poor mental stats - bravery determination...
- match high-jumping striker with high-jumping DC, and fast SC with fast DC.
- adopt tight marking in away games and all games you cannot impose possession advantage.
Also try to really control the game. When you play attacking fast tempo game the team needs to create opportunities and threaten. It work ok even if you do not score - this may be because they hurry too much. If they do not create opportunities you should consider control tactics.
With control tactics your team needs to have at least 52-55% possession, otherwise the tactics is not functioning well... You will need to win balls early, possibly with high closing down, etc.
