Does anyone know if you can play a network game of 2008 if you have two Laptops and connect each laptop via an Ethernet/Network cable?

Of course you can, that is what a network cable is for, to create a network. That is why it is called a network cable.

One computer needs to have "Run as Server" checked in the network preferences.

yes but I assume you need a twisted cable.
