I've seen somewhere that you can retrain players to play in another position, although I can't figure out how to do this.

Does anybody here know how to do it? I'm probably missing something stupidly obvious, knowing me!

You can retrain by going into the training section on a selcted player and go into overview. There is a drop down menu where you can select a players new position.

Also you can go to training menu and select "position tarining" (or similar) from view in the bottom half of the screen where players are listed.
