Different attribute values are coloured differently. In FM07, you could change the colour of the player attribute values by editing the colours.xml file and you could edit the thresholds of these different colours in the profile.xml file.

But I can't find any similar files in FM08, so can it be done, and if so, how?

There's a .fmf file somewhere in the data folder (I can't tell you which one for a reason I'll explain below) that has that stuff in it.

I just changed it about 10 minutes ago, saved it and loaded up FM. And when I did, I found that I no longer had any text to speak of. Everything else was there, but the text seemed to be missing. I changed the file back to what it was, but it didn't solve the problem so I just uninstalled FM.

Its in the settings.fmf file, but you need a tool to be able to edit that. A tool which is not released yet, so until then I don't believe there is a way to change attribute colors.
