As a Biology teacher, I disagree.

Potatoes are a complex carbohydrate. A simple carbohydrate in my eyes is a mono- or disaccharide such as glucose or sucrose. Potatoes contain starch, which is a long chain carbohydrate that needs to be broken down before it can be used as a substrate in Kreb's cycle for the release of adenosine triphosphate.

Thus, potatoes are very complex and not in the slightest bit simple.

I agree also with the comment above about a potatoe being rather more classy than a potato and also actually tasting rather more delicious.
