like most things with this game it depends on how you play. Football, however is a physical game so all physical attributes are important. Think of physical stats as the base, if your player has these he will cope in games. The higher you go the more players you will face with not only physique but technique too.
Its all relative though, because a player with exceptional technique can still be effective in a game if used correctly, ie Juninho/Riquelme type players.
If your playing in the lower leagues Physique is definately the most important field of stats
