Not bought the game yet, still saving for the 360. Are we able to watch games in "text" mode at a certain speeds like the old xbox game?

Also are we able to manage 2 teams at the same time?

You can have 'hotseat' play where more than 1 person can take turns managing different teams, though you can't manage more than 1 team at a time on your own. Unless you can still manage a national and club team at the same time, I don't know.

And yes, FM '06 has an option to play the match with just text commentary.
