Its my defenders it does not matter if i set them to short passing, long passing, direct passing they always just hoof it up into the left and right corners of the opposition and i have no midfield or strikers any were near to get the ball, so the opposing team just collect the ball and attack me again.
I suggest you spend a while on your tactics, I'm not sure how much you've changed or kept the same. I've played at every level and never experienced what you've mentioned.

Defensive clearances have been an issue ever since the 2D engine was introduced.
My defenders do it, too, especially my fullbacks. But my instructions tell them to, because my pacey strikers stand a good chance of running down the ball. Heck, it's half my game ...
You've also got to look at things like Decisions and Composure. Also depends on the level you're at and the level of opponent. Lower league defenders are going to flap more often (generally). Instructions - even with Creative Freedom set to lowest possible - won't always be adhered to, as attributes, personalities, morale, etc interact to produce events that can have you pulling your hair out.
It's trite, but that's football. Next RL match you watch (esp. Newcastle, Portsmouth, or Villa), have a look at the managers doing their nut on the touchline. It'll be because players aren't doing what they're meant to.
how about checking the tab Focus Passing (maybe you have it set to the flanks) else are you set time wasting to always (this will encourage passess into the opposition corners to waste time
