I am trying to recreate the watermark effect on the image in the background of the gif below. How do I achieve this? Thanks in advance!

You mean the green shadow ?
Duplicate the text layer, offset it a few pixels and reduce the opacity. Or use a Layer Style dropshadow and select green as the color...

Thanks for your reply docilebob - it's the gray and white image in the background that I am trying to recreate. Any help would be most appreciated

I do not want to recreate the image itself, just the effect.

Ah-HA !
My monitor seeems to have lost some subtlety somewhere. I didn`t see that at first.
It looks like an overlaid grid, maybe.
If you create the text and then make a grey and white grid on a layer above it, set to overlay, should get you close.
The grid would be similar to this :
