Because its a TV show. Just like Alan Sugar isnt going to be that of an arse with his real employee's, all these celebrity chefs will be the same. If they really were such an arse, no one would work for them

Every Chef I have met comes across as a utter **** during work but as soon as they are off the clock they are normally decent guys. They're just under alot of pressure to get things right.
As for celeb chefs. As has been said it makes good tv.
