tbh as an employer I wouldn't be fussed. I'd pick people without any real bias towards their university education, including whether they went at all.

Specialists certainly will. The law firms will know exactly how each university ranks in terms of its law teaching.
Generalist employers much less so. My experience comes from IBM, and they will generally know which are the top 20 or so in the rankings, and that's as far as they'll go.

Most people have a general idea.
