Throwing the ball throught the goalposts would be pointless, you wouldn't score, it would just be an incomplete pass.

Kicking it through, in specific situations, earns points.

What if a player is 'punting' (think that's the right term) and it flies between the goalposts? I presume that would just count as a field goal (??) .

That's just to gain ground and get past the 10 yard mark for another first down... but if you touchdown as a result it's the same as for any other touchdown.
