there are two that stand out for me

1) Ash - 1977 got me into Indie music for the first time, quality album.

2) Eminem - The Marshall MAthers LP - had never listened to any Hip Hop / Rap before this, but i listen to quite a lot now.

Not an album, but hendrix got me into playing the guitar (on a very basic level).

Scenes From A Memory by Dream Theater got me into the progressive side of metal / rock.

Otis Redding - Otis Blue. Got me into Atlantic Soul.

On a tangential note, quite a lot of what I listen to I got into because of a book called "1001 Greatest Singles Ever" by Dave Marsh. Sam Cooke, Doo-Wop, Van the Man, '60s garage, Ray Charles, etc. Really recommended if you ever find a second hand copy. It must be nearly 20 years old now.
