Also, how exactly does the population and the recruiting of soldiers work?
A thing I loved about Vicky is that if I fought a war and had too many casualties, it would really hurt you, while in other games wars don't really affect you that much.

My fav country in EU2 was Muscovy.
Venice, the Ottoman Empire (too easy to succeed though) and Castile were entertaining too.
I think I never tried exotic countries. I played with Serbia though in one of my first games, I conquered Albania but I couldn't turn them into a major power.

Muscovy is great. If you survive the early onslaught from Swedes, Lithuatians, Poles and the Horde you're onto a winner.
I don't have the game installed at the moment.
As for Muscovy, surving all of them and turning into Russia was very entertaining. It was also great to expand eastwards, and fight wars against China.
