A condiment is a prepared food, often preserved or fermented, that is added in variable quantities, most often at the table, to the diner's taste.
Although sometimes considered a condiment, salt is more strictly a seasoning than a condiment, as it has not been prepared.
Condiments may be served on the side or as a garnish, for example Sauerkraut may be used as a bed for Schweinshaxen (pork knuckles), or may be added as a topping to a hot dog. When served separately, the amount is usually at the diner's discretion, however condiments may be added prior to serving.
Some condiments may also be used during cooking to add flavour or texture.
Condiments are usually sauces used to enhance the flavor of other foods and not normally eaten on their own. For convenience, many condiments are provided in single-serving packets.

The term "condiment" originally meant seasoned, pickled, or preserved foods in Latin. Today, the word is broadly applied to a variety of foods, including spices, herbs, sauces, seasonings, flavorings, colorings, and even beverages, such as tea, coffee, and alcoholic drinks. A more narrow definition is that a condiment is a substance added to other foods for the purpose of giving a strong flavor or relish. Condiments usually appear on the table and are intended for individual use by the diner
Incidentally, the word has been passed down via Latin, Old French to Middle English simply meaning: to season.
