foam is pretty much over. "air" was in for a while but that died even faster. there's a backlash against molecular gastronomy since it's turned out that only about a half dozen people in the world can do it well and the rest are just frauds.

Foam over? We haven't even seen that around here (Philly) yet. We're the last stop on the trend tour before it filters down to the truckstop diner in Bloomington, so we're still getting Asian fusion (*shudders*), and tapas (*hate*) out of our system.

Not even sure if architecture has made it to these shores yet.
