Last time I went we stopped in a hostel. Not bad if you don’t mind sharing a room / toilet / showers with a bunch of strangers.
We’re looking at going next month and were booked into The Apex International but they double booked so we’ve been kicked out. Not sure what we’re doing now.
Should have mentioned that walking distance from the centre is essential.
Something extemely expensive is out of the question - but don't want anything cheap and nasty either. We're staying three nights, so something in the region of £250-£300 for the pair of us would be in the right ballpark (it'll be Friday, Saturday and Sunday nights).

Stayed in a B&B in the West End last time, and it was perfect. Big room, en-suite bathroom, TV and a great breakfast. Just have no idea what it was called.
I've tried most of them as we (me and my gf) used to use them lots before we got our own house and we never once had a bad experience with any, and all had en suite. You'd be very unlucky if you hit a bad one as most B&B's up that way have to rely on word of mouth due to the high cost of running these buildings.
Stick with the 3 star ones and you'll be fine. There's also a Travel Lodge, but I can't remember if that's at Haymarket or near the old Royal Infirmary. Both sites are central anyway. They're also relatively cheap too.
