How much notice do you take of dates on food?
E.g. display until and best before. Does your stance vary on the type of food, for example? If so, why?

Not much. If it's gone bad, it'll be noticable.

If it says Best Before, it's ok to eat after that date, it just won't be perfect.
Use By dates are for perishable goods with a low shelf life, and there's potential risk of illness from eating them after the date.

Just eat them and if you die then they're probably bad.
Unless you get hit by a bus or something.
