Default Monkfish filet

I have a monkfish filet in the fridge. Last night I simmered one in a coffee-molasses sauce and ate it with vermicelli. Recently I have grilled it and eaten it with nuoc cham sauce and vermicelli, and grilled it with garlic, thyme, and bacon and eaten it with a squash purée. All of them were very good, although the flavor of the fish got a little lost in the coffee sauce. I also simmered it in a white wine and cream sauce, and ate it with capellini, but that wasn't such a good idea.

So, OTF, any suggestions on what to do with today's monkfish filet? Help me with my lunch, please.

chop it up and dunk it in some lime juice for a bit, like ten minutes or so. comes out cooked.

yeah, the fat pig has some decent ideas sometimes. the blackberry maple syrup thing was good as well.
