That sounds really good. I'm not sure where I could find parma ham that I could wrap around it -- for some reason it's only sold in tiny little slices here. I'm sure there's some specialty store that has it, though. Thanks for the idea.

A mild oriental flavour is good with whole fish, especially a nice salmon, stuffing the cavity with prawns, ginger, sweet peppers, coconut and corinder and roasting it in the oven is quite nice.

Seasbass fillets. Slit the skin and stuff from rosemary in. Fry skin side down on a medium heat for 2-3 minutes then place in a 200 degree over on a pre heated baking tray for 2-3min serve with oilve oil and lemon juice. I normally serve is on some tiny cuber potatoes about 1cm*1cm*1cm roasted in rosemary and thyme.

It was too strong a flavor for the fish, but you can make all kinds of great sauces with the leftover coffee from the morning. Coffee goes particularly well with oyster sauce and well-cooked green bell peppers.
