For a more lighthearted cover, try the Richard Cheese version of Nirvana's "Rape Me", played in the lounge style.

The Corrs' rendition of Hendrix's 'Lil Wing' for MTV's Unplugged is fantastic.
Idha's acoustic cover of 'I'm Losing More Than I'll Ever Have' (Primal Scream).
James Dean Bradfield (Manic Street Preachers) performed live solo acoustic covers that were all fantastic: my particular favourites were 'Raindrops Keep Fallin' On My Head' (Bacharach) and 'Last Christmas' (Wham) [yes really! - it sounds totally different on acoustic guitar].
