i have a picture that i put some sweet text on and when i save it, there is no preview picture in the folder i saved it in. can this be changed somehow to show a thumbnail or something like that? thanks
Having PS save a composite thumbnail image of your document is a specific setting in your Prefs. Checkout in there and make sure you have this option turned on.
Also if you are using Save for Web... part of shrinking the file size is eliminating the thumbnail. If you are saving a JPEG and want a thumbnail, use Save As... not Save For Web...
now another problem i have is that when i do save the photos that i messed with, when i reopen them, my text layers disappear but the text is still on the photo. how do i get it so that when i reopen the photo, the layers will be there for me to use as a reference for other photos? if this makes any sense could someone help me out.

If I understand properly, you will have to save your files as PSD files and then save another copy as JPEG. PSD and TIF support layers but saving your files in Photoshop format maximizes editability.
