I prefer to sign my letters in blue ink, but it's not a hard & fast rule, but I would say that it should not be any other colour than black or blue for business letters.
The blue ink thing is on the basis that it's less likely to be one of those scanned signatures and it looks at least as though I've made the effort to sign the thing myself rather than have someone else knock out some standard letter for me... although with colour printers becoming more common, you could also get blue scanned signatures I suppose.
