Claire not immortal yet as Angela explained that the immortality only kicks in after a certain amount of regeneration, but didn't specify the amount. As much as Claire has healed so far, I don't think she's got anything on Adam who has spent most of the last four hundred years fighting in wars all over the world as a mercenary and dying on almost a daily basis.

Why do the whole adam meets peter thing before the killer of hiros dad is revealed.

It would have been so much better had the first we had seen of adam in present time was when hiro unmasked him.
