There's no limit as such mate. Mostly it depends what club you are. If you're a big club like Arsenal, Man Utd, Barca etc then you dont need to buy too many of them. If you are a mid-table or small club then go ahead and buy as many as you want.
The reason is that being a small/mid-table team, you could buy the kids really cheap and them nurture them for a year or two and then sell them on for a profit. But being a big team, you wont be concerned with buying with a view to sell as you'll have plenty of money coming in anyway. I play as Arsenal and generally buy only a few youngsters. Most of them are players who I think will actually be able to play for me in the future. Some are just added luxuries. If you think these players will add to your team then get them. Dont buy just for the sake of it!

No, it doesnt affect their training. You can have as many players as you like. Just make sure that you have good coaches and that none of them have a heavy workload. And obviously have separate coaches for every different aspect of training.
The more matches they get, the faster they'll develop. Training is enough for youngsters and then they have the reserve league games to play as well. That should be enough for atleast a season or two. You can get them a game here or there when you feel its safe to do so. Or else send them out on loan. The development with training slows down as they get older. Thats why you should mostly buy players you wish to use in the future. Saying that, many teams buy youngsters for cheap like I said with a view to sell them on to bigger clubs after a little while and make a nice profit on him. But to do so, you'll still need to play him a little so his value goes up.
As for how many youth coaches, that doesnt matter. I usually prefer to have the same coaches for youth and seniors. Otherwise it gets too complicated. Have a coach for each of the different training aspects. And then have ONE extra coach who can help out in all the areas. This extra coach can be any useless guy. His only job is to help out the other coaches and lighten their burden a bit.
