Can the whole of a players career stats be viewed rather than just the league stats - these are all I can find!?

Only for active (i.e. in game seasons). Stats before that are for league games only (which is correct with the current format of the db)

So if I want to see how many goals my player has scored in europe, fa cup etc, throughout his career its not possible?

You can but Aaron is on about the seasons before the game came out so , for example, Inzaghi's record breaking feat tonight IRL when he became the highest scorer in European competition history with his goal in the 1-0 win over Celtic would not be recognised in an FM game as all the goals he scored in previous seasons in European comps wouldn't be on the system.
