Ok, so installed the game and the final patch, and started my long term game.

Training has a minimum of 5 stars to each, using the TUG Training.

Not a single player has improved any stat after playing for 6 month.

Is it something Im doing wrong, is it a bug, or do I just have to be a bit more patient?

Are your player too old to improve?
If it happen for 16 years old this must be a bug...

Tbh it happens all the time in real life.

They are probably all just ****ing off to the pub.

Training facilities are the best with youth academy... mostly young players

Well it's strange... Maybe it's the training setting that you have that is wrong... i'm playing as Sampdoria (not the same facilities as Arsenal...) with my own setting and while the stat don't increase as much as prepatch they still rising...
Try to look and modify the training regime and check if your players are happy or not with the training schedule.

Why SI tweak this is beyond me...
