I have found, by accident, that if your board decides to sell a player you want to keep, keep delaying the transfer until the other team gives up. I kept two players from much bigger teams by doing this.

Yes I tried that but generally the offer is from a huge club so by delaying the transfer the player gets really annoyed.

Another way which I used is to offer the player in question a new contract, I did this and he accepted and viola! No transfer
