Depends on the quality of the squad tbh. However, I've been reading round and it seems that current training could be similar to how it was in at least one version of FM2007, where attributes would hardly fluctuate regardless of the training schedule, which was amended in a later patch. ATM I don't have FM2008 installed due to hardware issues, so can't see how attributes are influenced from training schedules.
Obviously the more specialist schedules you build, the more possibilities you are providing to your playing staff. You don't have to build schedules for every single player, although you could build spin-off schedules that may suit another player that plays in the same position.
Not every player will be satisfied with his schedule for a number of reasons; check out his playing positions to see an alternative schedule that could be used for example. However, some players may be more easily disatisfied due to their nature and personality; don't react to every single player that is unhappy with his schedule since you're in control and should set a schedule that you believe is ideal for the player. Only modify (in most cases, reduce) the overall intensity of the schedule if you feel it is justified because you may not be able to encourage a player's attribute improvements as successfully.
