Width - How far wide/narrow the players stand, or how often the pass to those locations, a mix of the two?
Purely the positions in which they line up.
And if you want to vary your width, for example a wide defense and narrow midfield but still using wingers, then a short sideways arrow applied to each of the wingers will see them position themselves between their actual position and the arrowed position.

Would I be right in thinking that when my team is out of possession, my AMC say, will take up a position a good distance from my def. line from where he will attempt to follow his ball-winning instructions . On the other hand, if he has a very defensive mentality he will position himself very close to the def. line from where he will attempt to follow his ball-winning instructions.

when you don't have possession of the ball and if you are on ultra defensive...your team will literally defend on the dline, if they are on ultra then the distance btw them and the dline will be far, which will mean a lot of balls breaking behind your defensive line.
