Playing as Man U, 3 seasons in and I have Ferdinand and Felipe Central defence.
Neither gets an 8 or above.
Both average under 7 for a season,This despite winning the league and cup?
I win most games and still they play sh!t according to the computer.
Im using A 4-2-3-1 I created my self (adapted from the fiora).
Any help on what to do / say to the players to make them play better?

Player ratings in FM 08 are down from what you would have expected in FM 07. Juast now, 10 is virtually impossible, 9 is rare, 8 is very good, and 7 is above avaerage. It is felt that 6.8-6.9 is an avarage rating in FM 08 so dont be too hard on them. Defenders in very good teams also dont get too much work so find it harder to earn high ratings.

Also, if you're winning and not conceding very many goals then why does it matter what ratings your defenders get just as long as they get the job done?
