There are a million ways to do this but here is the process I use most of the time.

Grayscale:

Convert to Lab mode, delete both the a and b channels, then convert to Grayscale.

You could just convert to grayscale right away, but I don't like the results as much.

Sepia. Convert to Lab. Delete the a and b channels, then convert back to RGB. Now use the Hue/Sat tool with the "colorize" option and move the hue and saturation sliders until you have the tone you like.

As for actions, once you've decided on a method you like, just record it using the action palette and it will be repeatable.

Hope that gets you going.

As MindBender points out, there are a zillion ways. My favorite is to use a Channel Mixer preset which comes with Photoshop in the Goodies folder on the Install Disk. I happen to like the Grayscale Standard.cha although I often tweak it slightly once it is loaded.

Here are the Grayscale channel mixer presets.
