I find it very difficult to render hair using the pen tool method, any tips please or even a tutorial?

Well there is little solution to this problem.U are better off lookin for a much more compact render

If u do though intent to use it,I would suggest:
Either u maximise[300%-500%] and try to get as much as you can
OR
Set ur render to SCREEN and black the render area in a new layer below it.

I usually take a 2 - 5 soft edged brush
with an opacity of 30%
zoom the render till about 600 %

and try to remove as much as u possibly can

here is one of my cuts using this " strategy " of cutting

Use the polygonal lasso and zoom in a lot. Pen tool sucks for cutting, it always takes longer than needed and the results are not so great.

You can also play with filter->extract.
