Yes, the tutorial was written for an "intermediate" skill level and, if you're a novice... well all the more power to you for tackling it!
There are as many different ways to make a selection (in this case the hair) as your skill/knowledge of the various tools permits.
As far as the "extract" method is concerned, I will refer you here...

It's a straight forward tutorial. Bear in mind, that it will take some practice and that results will vary, dependent on the background. Often times, once my extraction has been made, I will use the "clone" tool to put back "bits" that the extraction method has erased. Therefore, it's a "must" that you always keep a duplicate of your original.
