Saving it in Greyscale has nothing to do with any save command options. While you have your document open go to Image-->Mode-->Greyscale. Then save as usual. Make sure to keep a copy of the original.

There are numerous different ways to turn an image into grayscale. I'd suggest you do three different conversions and see which you like the best. First, convert the image to grayscale by going to the Menubar Image > Mode > Grayscale and save as, then (#2) convert to Lab and throw away the A and B channels, keeping the lightness and save as, thirdly use the Channel Mixer and load the preset found in your Photoshop folder > Presets > Channel Mixer > Grayscale > Grayscale Standard.cha. Save that, open all of them up and see which you like best. I tend to favor the Channel Mixer technique without any further adjustment.

Aha! I'm a Mac user but that shouldn't make any difference. I just looked at my install disk and the Channel Mixer Presets are in a folder which doesn't install automatically. They reside in the Goodies folder on the install CD. I always install the presets found there as many of them are quite handy. I'll go and jot down the Channel Settings and post back in case you don't have the CD handy.

This is probably the best method because its just an adjustment layer and is infinitely tweakable.
24, 68, 8. Yeah that sounds like a good greyscale image. The G channel always has the best info, but sometimes lacks some detail that the R channel has. and the B channel, well the B channel is the pauper of the group...thats handy to know if youre doing a lot of color correction...
just say it to yourself
