Why is Gaussian right?
Simply because when you convert to greyscale, you have no options but to accept what the engineers accepted as a "mean value".
So you limit yourself and your creativity.
The channel mixer gives you the option to play with the RG and B channels separately and decide for yourself to what extent they are allowed to influence your work. Here it's YOU who decides, not someone else.
Did you ever try out the LAB mode, and take a look at its channels???

Well, Alistair, when you open the Image drop down list, you can choose several modes. Like RGB, CMYK, greyscale and LAB mode.
Not only is LAB the largest of colour spaces -Photoshop uses it internally to switch from RGB to CMYK- it is also completely platform independant AND the ONLY mode that has a separate channel for the "black and white" info of a colour image. Here you do not have to convert to greyscale and have PS do the calculating for you. You can simply use the "grey" channel as greyscale image. It is the most accurate one.
I always scan in LAB mode and burn to CD's, and make Adobe RGB and no profile JPG's from that. Only the best is good enough!
Did you ever try out the difference between sRGB and Adobe RGB, prefereably with an image containing many geenish blues and rsoy oranges? Wow...no saturation can match this....
