Curves (Tonal Adjustments?)

Can anyone point me towards an explanation and practical use of Levels and Curves, Curves in particular? Not much in the PS7 User Guide on these.

This is a QuickTime movie on Apple's site that explains it very well...it's actually from Total Training. If you're on a PC, you may be a bit disconcerted at the references to the "Apple" or "Command" key; just make a mental switch to the Control key.
